OHOW’s Favorite Chilled Cucumber Soup with Shrimp

Ingredients
  

  • 3 lbs cooked, peeled, and deveined chilled shrimp (tail off) 16/20 count
  • 5 seedless cucumbers or English cucumber
  • 1 tbsp fresh dill chopped
  • 1 sweet yellow onion diced
  • 16 oz unsweetened yogurt regular or Greek-style
  • 1/4 cup lemon juice
  • 16 oz sour cream
  • 2 dashes Tabasco hot sauce to taste
  • Kosher salt to taste
  • black pepper to taste

Garnish

  • fresh dill sprigs
  • chilled shrimp
  • 24 oz. V8 or tomato juice

Instructions
 

  • Peel, cut (in half), and seed the cucumbers.
  • Place all ingredients into a food processor or blender and blend on high until smooth.
  • Garnish the cucumber soup with chilled shrimp and fresh dill. For added chill and flavor, freeze some tomato juice and dill in an ice cube tray and use it as a garnish.
  • Serve the cucumber soup chilled and enjoy!
