OHOW’s Favorite Chilled Cucumber Soup with Shrimp

- 3 lbs cooked, peeled, and deveined chilled shrimp (tail off) 16/20 count
- 5 seedless cucumbers or English cucumber
- 1 tbsp fresh dill chopped
- 1 sweet yellow onion diced
- 16 oz unsweetened yogurt regular or Greek-style
- 1/4 cup lemon juice
- 16 oz sour cream
- 2 dashes Tabasco hot sauce to taste
- Kosher salt to taste
- black pepper to taste
Garnish
- fresh dill sprigs
- chilled shrimp
- 24 oz. V8 or tomato juice
Peel, cut (in half), and seed the cucumbers.
Place all ingredients into a food processor or blender and blend on high until smooth.
Garnish the cucumber soup with chilled shrimp and fresh dill. For added chill and flavor, freeze some tomato juice and dill in an ice cube tray and use it as a garnish.
Serve the cucumber soup chilled and enjoy!
