This light cucumber and shrimp soup recipe combines cucumbers’ cooling effect with the bold flavors of fresh dill, lemon juice, and sour cream. Add some chilled shrimp for added protein, and you have a luscious, satisfying soup to serve as your main course.

Combine your peeled and seeded cucumbers along with the rest of the ingredients in a food processor or blender, then blend until creamy. Yes—that’s it! If desired, chill the cucumber soup in the refrigerator before serving (or if you make ahead), then finish with a garnish of chilled shrimp and more fresh dill. Try fresh tomato juice and dill ice cubes for added flavor.

  • 3 lbs cooked, peeled, and deveined chilled shrimp (tail off) 16/20 count
  • 5 seedless cucumbers or English cucumber
  • 1 tbsp fresh dill chopped
  • 1 sweet yellow onion diced
  • 16 oz unsweetened yogurt regular or Greek-style
  • 1/4 cup lemon juice
  • 16 oz sour cream
  • 2 dashes Tabasco hot sauce to taste
  • Kosher salt to taste
  • black pepper to taste


  • fresh dill sprigs
  • chilled shrimp
  • 24 oz. V8 or tomato juice


  • Peel, cut (in half), and seed the cucumbers.
  • Place all ingredients into a food processor or blender and blend on high until smooth.
  • Garnish the cucumber soup with chilled shrimp and fresh dill. For added chill and flavor, freeze some tomato juice and dill in an ice cube tray and use it as a garnish.
  • Serve the cucumber soup chilled and enjoy!
