OHOW’s Favorite Pan Fried Walleye

At OHOW, we love the light and clean flavors of our Favorite Pan Fried Walleye. This easy recipe requires simple ingredients but delivers delicious results. 

“This is one of our Friday lunch specials, and it’s quite a crowd-pleaser,” Chef Mike said. “Plus, it’s quick and easy.”   

This recipe is simple. With added preparation time for your side dishes, you’ll have dinner ready in 10 minutes! You begin by heating olive oil in a pan. While the oil heats up, dust your walleye filets in seasoned flour. Our recipe is seasoned with cracked black pepper and kosher salt, but you can feel free to add any spices you like. 

Next, melt one tablespoon of butter in the pan. Brown the fish on each side. This process should take about 2 minutes per side, depending on the size of your filet. Once finished, transfer your fish to a platter and keep it warm until you are ready to serve. 

Next, you’ll make brown butter sauce for added flavor. In the same skillet, add your remaining butter and cook it down until it turns golden brown. Remove the browned butter from the heat and add it to a bowl. Add your slivered toasted almonds and chopped capers to the butter mixture. 

Now you’re ready to serve! Drizzle the walleye with your brown butter, almond, and caper sauce. Serve this dish with vegetables, rice, or potato cakes. This dish tastes wonderful garnished with lemon and chopped parsley.

Ingredients
  

  • 4 walleye filets, skin on and pin bone out Each filet about 5-7 oz.
  • 4 tbsp flour seasoned with cracked black pepper and kosher salt to taste
  • 1 tbsp  olive oil
  • 1/3 cup cold butter cubed
  • 1/4 cup slivered almonds toasted
  • 2 tsp capers chopped

Instructions
 

  • In a large non-stick skillet, heat olive oil. Dust walleye with seasoned flour set fish flesh side down. First, brown the fish on both sides in the oil and 1 tablespoon of butter until the desired result (about 2 minutes per side). Keep warm on a serving platter.
  • In the same skillet, add the remaining butter and cook until it turns golden brown. Quickly remove from the heat. Strain into a bowl and add the remaining ingredients.
  • Drizzle the fish with the brown butter with almond sauce. Serve with your favorite vegetable, rice or potato pancake. Garnish lemon wedge and chopped parsley if you wish.
